I've played around a little bit with fillings. My husband's favorite (by far) is the same kind of tuna I make for sandwiches or with crackers (with miracle whip, garlic, onion and pepper). I really don't add anything to the rice when I make onigiri so this turns out very tasty ^-^
I've also used very well drained canned peaches too. However, I would recommend wraping that in some kind of soy paper instead of seaweed. I liked them, but the peaches and seaweed made an unusual flavor combo....

I use the flavoured mackerel I can get at my local supermarket - it's vacuum packed in the chiller cabinet and you can get chilli, black pepper etc flavoured variants. Just flake up and stuff away :D

I've seen kiwi used in sushi, but only ever rolls. I guess you could use jam or compotes in a fruit onigiri version but it would definitely fall into the treat category for lunch

My favorite is cream cheese and smoked salmon.

I've also done some that aren't stuffed, but using the mix in stuff for onigiri that you can get at japanese food stores. More flavor than plain rice, but not as much flavor as a filling.

I usually don't put anything in mine. If i do, it's almost always imitation crab meat.
