Catfish curry bentos x 3
Today I used up all of last night’s homemade curry in three bentos: for my son, myself and my husband. So of course my husband forgot to bring his lunch to work with him today, and I wound up going out to eat with a group after Japanese playgroup, but at least my son ate his at the restaurant! Here’s the one that got eaten today:

- Rice balls made of rice mixed with Thai yellow curry (with chopped-up catfish, red bell peppers, zucchini, carrots and onions)
- grapes, tomatoes, and grilled asparagus tips
- Irish cheese cut into butterflies
- roast chicken
My lunch adds grilled salmon:

Leftover makeover: Indian curry
Leftover grilled chicken and potatoes gets a new look as Indian curry. Packed in my cheap Chinese thermal lunch jar and an Anpanman snack container (uh oh, I made my husband carry a cute container! Let’s see what happens…).

- chicken and purple bell pepper coconut curry
- braised potatoes
- black Mission figs

Tricolor lunch
I gave stewed collard greens a new look by scrambling them with an egg. This lunch reminds me of a Japanese tricolor soboro bento, but with different flavors. Packed in my Lock & Lock bento set.

- teriyaki pineapple chicken meatballs (Aidells) with homemade teriyaki sauce
- collard greens, ham hocks and egg scramble
- sauteed orange bell pepper and onions with Thai basil and chile

Spinach egg ball and kumquats
Leftover Cajun creamed spinach got a new look as a spinach egg ball.
- steamed Chinese pork bun
- kumquats
- California roll
- cherry tomatoes
- homemade ma po tofu with orange bell peppers
- spinach/egg ball: egg mixed with Cajun creamed spinach, scrambled and wrapped/shaped in plastic wrap
- dipping sauce for pork buns
