Mac and cheese lunch

Pasta lunch for toddler

Contents of Bug’s lunch: Grapes, blueberries, chicken salad, and shells and cheese doctored with sauteed asparagus, onions, hot dogs and tomatoes.

Morning prep time: 4 minutes, using leftovers and store-bought deli items (chicken salad from Costco). The leftover shells and cheese had been in the refrigerator in a microwave-safe container and had a gummy texture, so before packing I added a splash of milk and microwaved it for 20 seconds to bring the texture back to normal.

  1. 20 seconds in the microwave just made it a little warm, not hot. I did let it cool down a little, but it didn’t have far to go (and I didn’t want it cold, otherwise the texture would get nasty again).

    I just discovered your site. Just love it, you must spend a fair amount of thought to make the grub appetising for a toddler. Kudos
    Completely fab, gives me ideas to jaz up my lunch. However living in the tropics (in a developing country) means a completely different take on what is available, so will be trying to substitute the best I can.

  3. Ah,okay. we couldn’t do that as it would sit on the school shelf in an insulated bag for a few hours. Shame, as it sounds/looks really tasty. I’ve located somewhere in the UK that sells Bento boxes but also there’s a guy who has started importing the laptop lunch boxes.
