Orzo salad x 3
I cooked up all the orzo in the house and it was only enough for two orzo salad bentos — so I used leftover rice in mine. First, my son’s:
- orzo salad with yellow bell pepper, cherry tomatoes, green onion and a citrusy vinaigrette (everything cut up small for my son except the three stars on top)
- sliced fish cakes (slightly sweet) — one of his favorite snacks
- hard-boiled quail egg dyed light blue
- a cherry and a cheese triangle
My husband’s is here with some roast chicken and a snack container of blueberries and cherries:
And my rice salad is here with eggs cut up into it (I ran out of arrangement steam at this point):

Thank you! Tasted good to me, unfortunately my son totally rejected the orzo! Did have fun pointing at the stars and eating the cheese, though…

Mmm, that orzo salad looks fabulous… Was it your own recipe? Or one found in a book? So far I’m not seeing it in any of my books

@3 from TyR: I just threw it together, no special recipe per se. I used some homemade vinaigrette I had on hand (I think I used some orange juice, orange-flavored olive oil, seasonings, etc.) and chopped raw veggies together with cold, rinsed orzo, and adjusted seasonings to taste at the end.
